I think you might actually be referring to 'afternoon tea' and not 'high tea'. People often get the two mixed up, I explained the difference between the two in my answer to 'what is high tea?'. If you want to make high tea, simply make dinner and serve it with a strong pot of black tea. If you want to make 'afternoon tea', which people tend to mistakenly refer to as 'high tea', here is how you do it. All you need is black tea with little cakes and sandwiches, so if you want to make it at home you will need cake and sandwich like finger food. Scones with jam and cream are a really good idea too and very popular. You can add some fruits, chocolates, sweets - whatever you fancy, really! If you want it to be a little bit more special you can serve your pot of tea and little bits and pieces on a special high tea or cake stand along with some bubbles and enjoy with your friends and family. If you are willing to go the extra mile, add flowers for decoration. In terms of tea, I would suggest having a couple of different options like earl grey, lady grey or darjeeling.
